- Caramelize the sugar in a pan, roughly chop the nuts and add and coat with the caramel. Put the mixture on a greased tray and let it cool down.
- Whip the cream until stiff and put in a cool place.
- Chop the nut brittle. Beat the egg in a bain-marie until foamy and let the sugar trickle in.
- Then beat in a cold water bath until cold. Fold the brittle and the whipped cream into the egg mixture.
- Pour into portion molds and freeze.
