Instructions

  1. Blanch the beans in boiling water for about 4 minutes until they are firm to the bite and rinse with cold water. Put aside. In the meantime, peel the onion and cut into strips along with the breakfast bacon. Peel the carrot into fine strips with the vegetable peeler. (They should look like tagliatelle).
  2. Now fry the bacon and onion in oil for 2 minutes, add the beans and fry for another 2 - 3 minutes. Add the carrot strips and fry for another minute. Now put everything from the pan on a plate and set aside.
  3. Melt the butter in the same pan, add the sugar and let it caramelize. As soon as the sugar has browned, deglaze everything with a good dash of balsamic vinegar and let it boil down (approx. 3 minutes). If the sauce is still too sour, add another teaspoon of sugar and let it melt.
  4. Finally, put the salad back in the pan, heat it up briefly and mix everything with the balsamic sauce.
