Wash the rocket and figs and pat dry. Separate the tips from the figs and score each fig at the top of the cut in a cross shape (2x or 4x). Press lightly from below and place in an ovenproof dish with the cut surface facing up.
If you choose Serrano ham, I recommend placing it in the spaces between the figs and browning it with them.
Unbaked raw ham is draped on the bed of rocket as a rose.
Prepare a dressing from oil, lemon juice, clove powder and honey, which is drizzled on the figs. A little more liquid might be advisable if you use a lot of salad.
Place the mold in the preheated oven at 200 degrees for approx. 12-14 minutes.
Place the warm figs on top of the rocket, place a small ball of mozzarella in each of the fig star, sprinkle with roasted pine nuts, pour over the dressing and finally sprinkle with a few wedges of peccorino cheese as a garnish.
