Instructions

  1. Clean the duck breast, cut into the skin side and fry in a pan with oil, first on the skin side, then on the meat side (depending on size) for five to six minutes, the duck breast should be medium fried.
  2. Line the inside of an old pot with aluminum foil, put the incense flour in the middle of the pot. Now place a sieve attachment (steamer insert) over it and place the duck breast inside. Let it simmer in the smoke on the stove top over medium heat with the lid closed for about 15-20 minutes. Season the duck with salt and pepper before serving.
  3. Caramelize sugar in a saucepan, deglaze with white wine and add grenadine and lemon juice. Bring to the boil and add the cranberries. Reduce a little and season again to taste.
  4. Clean and wash the lettuce and spin dry again.
  5. Mix the vinegar and the spices in a bowl, then add the oil. Peel and core the apple and cut into small cubes, add to the dressing.
  6. Mix the salad with the dressing in a bowl.
  7. Serving
  8. Place the lettuce in the middle of the plate, fan the sliced duck breast onto the lettuce and spread the cranberries over it. Good Appetite!
