Instructions

  1. Process the zucchini into pasta with a julienne grater or a spiralizer. Halve the onion and cut into strips.
  2. Heat the vegetable oil in a pan and cook 3/4 of the onion and zucchini noodles al dente. Lightly salt both.
  3. For the dressing, stir the ingredients in a blender with a dash of hot water. If the dressing is still too thick, dilute it with more hot water.
  4. Mix the dressing with the zucchini and onion mixture. Chop the nuts and coriander. Garnish the salad with the remaining onions, coriander and nuts.
