For the dressing:

- Process the zucchini into pasta with a julienne grater or a spiralizer. Halve the onion and cut into strips.
- Heat the vegetable oil in a pan and cook 3/4 of the onion and zucchini noodles al dente. Lightly salt both.
- For the dressing, stir the ingredients in a blender with a dash of hot water. If the dressing is still too thick, dilute it with more hot water.
- Mix the dressing with the zucchini and onion mixture. Chop the nuts and coriander. Garnish the salad with the remaining onions, coriander and nuts.
