Cut the melon into wedges, remove the flesh from the skin and cut into strips. Remove any cores that may be present. Clean, wash and thinly slice the radishes. Wash the mint, shake dry and cut into fine strips.
Squeeze the lime and mix the juice with pepper, salt and sugar, then beat the oil on top.
Mix all ingredients and let steep for 10 minutes. Arrange the salad and before serving, cut the cheese into slices and crumble over the salad.
