Instructions

  1. Put wheat semolina in a bowl and pour in hot water until everything is covered. After 30 seconds, pour off excess water. Put a plate on it. Stir and cover again and again in between.
  2. In the meantime, finely chop the parsley and the spring onions into thin rolls. When the semolina is cold and after tasting it is also soft, stir the paprika puree and vigorously. Then mix in lemon juice and oil. Not too much oil so it doesn`t get soggy. Finally add parsley and spring onions, season with salt and pepper. If you also like it spicy, you can season with coarse paprika, which is available in every Turkish supermarket. Let it steep for 45 minutes and roll it into the washed lettuce leaves.
