Okroshka with whey, without meat, is no less loved in my family than the sausage version with kvass. I calculated the exact proportions of food for two for vegetable okroshka and I cook it when the children are in the camp.
Boil eggs and potatoes until tender. Peel eggs, potatoes, and cucumbers.
Cut the eggs and potatoes into small cubes, transfer to a saucepan with a volume of about 1.5 liters.
Cut the cucumber into cubes, finely chop the onion, transfer to a saucepan with eggs and potatoes.
Pour the whey into a saucepan, focusing on the desired consistency. Salt vegetable okroshka in whey, stir. Because okroshka is prepared in two portions and therefore served immediately, then sour cream is added immediately. Mix well whey vegetable okroshka with sour cream and serve.
