A very unusual breakfast of just 5 ingredients – delicious whipped oatmeal with blueberries, which tastes and textures like berry pudding. The porridge is boiled in water and, thanks to an interesting cooking method, it turns out to be incredibly tender, airy, and refreshing. Simple, original, and delicious!
Measure out about 400 ml of water in a saucepan or small saucepan. Add prepared blueberries, keeping a pinch to decorate the dessert. Set to maximum heat, bring mixture to a boil, reduce heat to low, and cook for about 10-12 minutes.
Transfer the oatmeal to a blender bowl or grinder and beat in short bursts at high speed. The finer the oatmeal is cut, the more tender and uniform the texture of the finished dish will be. I ground the oatmeal to a powder. Add sugar and salt to the blueberry saucepan. Stir.
Place the crushed flakes in a separate container. Add about 8-12 tbsp of water in which blueberries were cooked. Mix thoroughly until smooth.
Add the resulting oatmeal mixture to the saucepan over the boiled blueberries. Bring the oatmeal and blueberry mixture to a boil and simmer over low heat for about 5 more minutes, until the porridge thickens.
Then turn off the heat, cover the resulting mass with cling film in contact and leave to cool to room temperature.
When the porridge is completely cool, beat it with a mixer on high speed for about 5-7 minutes to make the porridge more fluffy and light.
The whipped blueberry oatmeal is ready. This unusual porridge is most delicious when cold. Garnish with mint leaves, a pinch of blueberries, if desired, and serve.
