Instructions

  1. Soak the white beans overnight. Chop the onion into large pieces and the garlic into small slices.
  2. Pepper and salt the leg slice and sear it on both sides in the hot clarified butter. Now add the onion, garlic and bay leaf and roast briefly. Deglaze with beef stock and turn down to 1/4 the heat. Cover and let simmer for a good 2 hours.
  3. In the meantime, dice the soup greens and cook them together with the white beans in a little broth with the savory until they are almost soft. Remove the meat, detach it from the bone and shred it into pieces.
  4. Pour the green bean mixture into the pot of the leg slice and add the meat. Season to taste with salt and pepper and cover with beef broth and let simmer for approx. 15 minutes.
  5. It tastes even better when warmed up the next day!
