Instructions

  1. Wash the beans in a colander and soak in 1.5 liters of cold water overnight. The next day, bring the beans to the boil with the soaking water and simmer over low heat for 90 minutes.
  2. Remove the stems from the tomatoes and then cut the tomatoes crosswise. Bring water to the boil in a small saucepan and place the tomatoes in the hot water bath for a few moments. Then quench with cold water, peel and cut into small pieces. Now peel and dice the onion and then sauté in a small saucepan with hot oil. Add the tomato pieces to the onions and sauté briefly. Then season the tomato sauce with salt, pepper, oregano and the bay leaf and simmer on medium heat for 30 minutes. After this time, remove the bay leaf from the sauce and puree it with a magic wand. Now add the drained white beans to the tomato sauce and let everything simmer for another 5 minutes.
  3. Finally fold in the finely chopped parsley leaves.
