Clean and chop the chili peppers and spring onions as well as the ginger.
Heat the sesame oil and sweat the aforementioned ingredients in it. Add sugar, then water. Dissolve the sugar over medium heat while stirring. Add the vinegar, bring to the boil and then set aside to cool.
Cut the white cabbage into bite-sized pieces, sprinkle with the salt and mix well. Let stand for a few hours and drain / dispose of the resulting water.
Finally mix everything together and let it steep in the refrigerator overnight.
