Peel the veal sausages and cut in half lengthways. Whisk the eggs in a bowl. Dip the halved sausages in it and then roll them in breadcrumbs. Press down well.
Heat the fat, oil or coconut oil in a pan and fry the breaded veal sausages until golden brown.
We had potato salad with it. Everyone managed 3 half sausages.
Instead of breadcrumbs, you can also use gluten-free breadcrumbs, e.g. from Leimer.
