Instructions

  1. Burger bun:
  2. Warm the milk and butter to lukewarm. Knead the flour, yeast, sugar, milk-butter mixture, 1 egg, salt and honey to a smooth dough. The honey can make the dough sticky, then just add a little flour. Put the dough in a bowl dusted with flour and cover and let rise in a warm place for 30 minutes.
  3. Knead the dough again briefly, then divide it into 6 portions and shape into balls - place them on a baking sheet lined with baking paper or a wire rack with sufficient space and cover and let rise for another 15 minutes.
  4. Mix the egg yolks with the cream (or milk) and carefully place on the rolls - now sprinkle the selected seeds and grains on the rolls. Preheat the oven to 200 degrees and lower top heat and bake the rolls for about 20 minutes.
  5. BBQ ketchup:
  6. Caramelize 1 tablespoon sugar with a little oil in a saucepan. Dice the onions and garlic and add them to the saucepan. Add the tomato paste, the spices and the lemon zest to the saucepan and lightly roast. Deglaze with the vegetable stock and the ketchup and vinegar. Add the bay leaf and cinnamon stick. Let the sauce simmer for about 10 minutes and season to taste with salt, pepper and sugar.
  7. Burger patties:
  8. Knead the minced meat with 1 egg, salt, pepper and some breadcrumbs and season to taste.
  9. Sweet garden vegetables:
  10. Cut the carrots into thin slices with a peeler. Cut the onion into rings. Brush both with any amount of honey and salt.
  11. Cut the pickles and pluck the lettuce.
  12. Hit the grill:
  13. Divide the minced meat into 6 portions and shape into a circle. Roast the burger patties and vegetables on the grill. Place the cheese on the meat while still on the grill and let it melt. The bread can also be briefly put on the grill to reheat.
  14. Serving:
  15. Halve the burger buns, spread the sauce and cover the lower half with lettuce and the pickled cucumbers. Place the freshly grilled meat with the cheese on top and put carrot strips and onion rings on top. Finally, put the top half of the bun on top and enjoy.
