Instructions

  1. Wash and cook potatoes. This takes about 20-25 minutes over medium heat.
  2. Pour cold water over the potatoes and peel them warm. Cut into slices or cubes and place in a large bowl. Pour hot vegetable stock over it and let it steep for 30 minutes.
  3. Put the balsamic vinegar in a blender jar. Add the chopped wild garlic, pepper and sea salt. Puree the wild garlic with the mixer, pour in the olive oil or add 2-3 portions and mix again each time. Pour this spicy salad dressing over the potatoes and stir in. Let the salad stand for about 30 minutes.
  4. Just before serving, pick the daisies in the garden, dip them in cold water and pour them over the salad. If you can still pick a few leaves of ground elder or similar in the garden, you can also add the available edible herbs and flowers to the salad.
  5. Since potatoes absorb different amounts of liquid, please adapt a little to your own preferences.
