Instructions

  1. Put on pasta water.
  2. Puree the wild garlic with the cream and season well with salt and pepper. Add the egg yolks.
  3. Dice the onions and sauté, then add the ham cut into small pieces.
  4. In the meantime the pasta water should boil. Cook the spaghetti al dente in it. Keep some cooking water when pouring off the spaghetti.
  5. In a large bowl, mix the spaghetti with the onions and ham immediately after cooking. Then add the cream and wild garlic mixture and immediately stir vigorously so that the egg does not curdle. If the mixture is too dry, add some of the cooled cooking water. Caution: If the mixture gets too hot, the egg will coagulate, so keep stirring vigorously. Finally sprinkle parmesan on top.
