Mix the flour with the eggs, milk and salt to a smooth dough. Let it soak for about 15 minutes. Then stir in the wild garlic. Heat some oil in a large pan and bake thin pancakes.
Wild garlic pancakes go well with asparagus with hollandaise or a light sauce.
Cut the leftover wild garlic pancakes into fine strips and use as a soup filler (wild garlic fries). The pancake strips can easily be frozen and then thawed in a hot bouillon.
