Instructions

  1. Cut the wild garlic into small pieces, then puree with the egg, egg yolks, oil and salt in a blender.
  2. To sift flour. Gradually add the flour to the wild garlic mixture and knead carefully with your hands until you have a smooth dough loaf.
  3. Wrap this ball of dough in cling film and chill for about ½ hour.
  4. Roll out the dough very thinly and cut into narrow strips. If you have a pasta machine, you can of course use it very well.
  5. Hang the pasta to dry or cook immediately in salted water for about 3 - 5 minutes.
  6. The pasta is very tasty as an accompaniment to fish or with melted tomatoes as a main course.
