Mix the rice, broccoli, spring onions and cheese in a large bowl and stir in the egg mixture.
Heat a large pan over medium heat. Add olive oil and butter in equal parts (about 1 tablespoon each).
As soon as the butter and oil mixture is warm, spoon about 1 1/2 tablespoons of rice mixture into the pan and gently squeeze it into flat buffers. Fry the pancakes on both sides.
