- Peel and core the apples and cut into large cubes. Put the raisins, honey, cinnamon and water in a saucepan and cook until soft.
- Mix the mascarpone with the vanilla sugar until creamy. Whip the cream until stiff and fold in.
- Crumble the bottom layer of speculoos until the bottom is covered. Then put the cream on top and finish with the compote.
