Mix the quark and yoghurt together with the sugar in a bowl. Prepare two glasses and fill each with 2 tablespoons of the quark cream, pour a heaping teaspoon of plum jelly on each and distribute it.
Now put 2 tablespoons of quark cream on top and then spread 1 heaped teaspoon of plum jelly on top of each. Finally, 2 tablespoons of quark cream again. Crumble the speculoos and spread on the top layer.
This dessert can be prepared well, if you serve it later, you should only sprinkle the speculoos crumbs on top shortly before serving, otherwise they will become soft.
