Instructions

  1. Soak the raisins in the rum. Wash, core and cut the fruit. Rub the peel of a lemon. Fillet both lemons and collect the juice. Grind the allspice very finely. Scrape out the vanilla pod.
  2. Mix the apples and plums with the orange and lemon juice, sugar, vanilla and allspice and puree with a hand blender. I don`t do it all musically, but leave a few pieces whole. Add the drained raisins, vanilla pulp and cinnamon stick.
  3. Bring to the boil and cook on reduced heat for 5 - 10 minutes, stirring constantly, until the desired consistency is achieved (gelling test!). Add the rum and lemon pieces and let cook for another minute.
  4. Immediately fill very clean jam jars, place the lid down on a cloth, turn over again after 5 - 10 minutes.
