Wash oranges, grapefruit and lemon well, peel finely and squeeze out the juice. Cut the bowl into the finest strips or cubes and simmer gently for about 15 minutes with 0.5 l water and a little juice with the lid closed. Peel and finely grate the pears and apples and add to the skins with the remaining juice and spices. Let simmer for another 15 minutes. Weigh everything together and cook to jam with half the weight of preserving sugar according to the cooking instructions. Finally mix in the raisins. Pour hot into rinsed glasses.
