Cut the ginger and shallot into small pieces and sweat in a little fat in a saucepan. Add the tomatoes and applesauce and bring the sauce to a boil. When it starts to simmer, add the curry and paprika powder. Carefully season the sauce with Worcestershire sauce, Tabasco, sugar, salt, cayenne pepper and white wine vinegar. Boil for a short time and then transfer to a sterilized (boiled) mason jar or an empty, sterilized ketchup bottle.
If you like, you can also add some freshly squeezed garlic, which rounds off the taste.
