• 1 medium shallot (s)

• 6 tablespoon applesauce, mango purée or apple-mango purée
• 1 tablespoon white wine vinegar

• 5 teaspoons, heaped curry powder
• 3 teaspoons, heaped paprika powder, noble sweet
• 0.5 teaspoon ½ Worcestershire sauce, more if you like
• 2 dashes Tabasco
• Cayenne pepper

Instructions

1. Cut the ginger and shallot into small pieces and sweat in a little fat in a saucepan. Add the tomatoes and applesauce and bring the sauce to a boil. When it starts to simmer, add the curry and paprika powder. Carefully season the sauce with Worcestershire sauce, Tabasco, sugar, salt, cayenne pepper and white wine vinegar. Boil for a short time and then transfer to a sterilized (boiled) mason jar or an empty, sterilized ketchup bottle.
2. If you like, you can also add some freshly squeezed garlic, which rounds off the taste.
