Mix the eggs, flour, salt, milk and mineral water vigorously. Heat 1 teaspoon of oil in a coated pan. Bake a thin pancake, remove it and keep it warm.
Bake three more pancakes in the remaining oil. In the meantime, dice the meat and marinate with the soy sauce and the spices.
Clean the spring onions and cut into fine rings. Finely grate the carrot.
Heat 1 teaspoon of oil in a second pan. Fry the meat until crispy, then remove it. Put the rest of the oil in the pan, steam the onions in it for about 2 minutes, remove them too.
Wash the lettuce leaves and cut into fine strips. Fill each wrap with meat, onions, lettuce, carrots and cheese, then roll up.
