- Chop the unsalted cashew nuts with a mortar and lightly toast them in a non-stick pan.
- Meanwhile, wet a flat plate with balsamic vinegar and place the salmon ham on top.
- Spread the rocket on top and season with olive oil, pepper and lemon juice. Scatter the roasted cashew nuts on top.
- Cut the parmesan into wafer-thin flakes and sprinkle over them as well.
- Ciabatta pieces with pesto rosso and, for example, basil leaves / parmesan / ham etc. also taste great.
