Instructions

  1. Crumble the yeast in the lukewarm water and let it dissolve together with the sugar while stirring. Cover the bowl with a tea towel and let it rest for about 10 minutes.
  2. Then put all the ingredients in a bowl and knead into a smooth dough. Then you shape it into a ball and coat it completely with a little olive oil to prevent the dough from drying out. Then leave the dough covered in a warm place for about 60 minutes until its volume has doubled or, better, tripled. Meanwhile you can prepare the pesto. For the tomato pesto, roast the pine nuts without oil in a pan, turning them constantly. Then you take them off the stove and let them cool down. Grind with the drained tomatoes and herbs in a blender. Finally add the olive oil and mix until you have a paste-like mass.
  3. Roll out the yeast dough into a rectangle on a floured work surface. Cut out circles with a round cookie cutter or glass and always spread one half with the pesto. Fold the uncoated side down and place it upright in your form. You can take a close look at this in the video. Cover with a tea towel and let the yeast dough flower rise again in a warm place for about 30 minutes. Bake the yeast dough flower in a preheated oven at 200 ° C top / bottom heat for about 30 minutes until it is golden brown. Then you can serve them warm.
  4. You can of course also make other types of pesto or fillings.
  5. Note: The yeast dough flower is a hearty party or barbecue recipe. It consists of a fluffy yeast dough and is filled with a spicy, homemade tomato pesto. The simple folding technique makes it an eye-catcher at every party. The pieces can be plucked off one by one and eaten like a hand food. In addition, it is prepared without animal additives and is therefore also suitable for vegans.
