Put the yogurt in a bowl. Rinse the lime under hot water. Rub the peel of the lime. Then squeeze out the lime and add its juice and zest to the yogurt. Add a dash of orange juice. Mix everything well.
Wash the mint and shake dry. Finely chop the leaves. Clean the spring onions and cut into small rings. Even the green. Add both to the yogurt. Then season with salt and pepper (orange salt, sea salt and lemon pepper are especially delicious), curry and rose paprika to taste (I add about half a teaspoon of both). Stir everything until smooth.
