  1. Peel the potatoes, onions, and garlic. We twist the meat through a meat grinder or use ready-made minced meat. Instead of flour, we will use semolina.
  2. Rub one onion on a coarse grater. Pass the garlic through a press. Add onion, garlic, salt, and pepper to the minced meat. We mix.
  3. Grate the zucchini on a coarse grater, salt, and let stand for about 20 minutes. Squeeze the zucchini, drain the juice that comes out of the zucchini.
  4. We also rub potatoes, but on a fine grater. At the same time, when there are three potatoes, we alternate it with the remaining onions (we also rub the onions on a fine grater) so that the potatoes do not turn black. Squeeze the potatoes with onions and transfer them to the zucchini, while not pouring out the liquid (potato juice). Let the potato juice stand for 10 minutes so that the starch settles to the bottom.
  5. Salt (remember that we have already salted the zucchini) and pepper to taste. Mix well. Add semolina to the vegetable mass. If the potatoes are young, then you will need more semolina. If the potatoes are ripe, then less. We mix. It should not be a very dense mass, but at the same time, it should keep its shape.
  6. Add the potato starch that has settled to the bottom to the squash and potato mass.

  7. Preheat a frying pan with vegetable oil. Put 1 tablespoon in the heated oil. a spoon of vegetable mass, level. Put a little minced meat on top of the vegetable mass (about 1 teaspoon). Cover with about 1 tablespoon. a spoonful of vegetable mass. Potato pancakes with zucchini and meat filling can be fried in a pan over low heat, like ordinary pancakes, until golden brown on both sides.

  8. For convenience and to serve all the pancakes together and hot, quickly fry them on both sides in a pan and put them on a baking sheet. Then we send the pancakes with minced meat in the oven, preheated to 200 degrees, for 15 minutes.
