Finely chop the garlic cloves and basil leaves. Mix both with salt, pepper and vinegar.
Cut the zucchini into thin slices and fry one after the other in olive oil. Then layer in a baking dish. Brush each layer with the vinegar and spice mixture. Cover and leave to marinate in the refrigerator for at least one, better two days. If the baking dish doesn`t have a lid, cling film will too.
Take out about 1 hour before eating and serve with white bread, flatbread or baguette.
