Peel and core the apples. Peel the large zucchini and cut out the stones. Cut the apples, zucchini, garlic, chilli (without seeds!) And the ginger into very fine cubes.
Put everything together with the sugar, the spices and the vinegar in a saucepan, stir and bring to the boil. Simmer over a very low heat for about 60 minutes. Stir regularly so that the mass does not stick.
