Instructions

  1. Heat 1 tablespoon of olive oil in a pan and sweat the onions in it until translucent. Add the apple, tomato and garlic and simmer for about 5 minutes.
  2. In a second pan, roast the sunflower seeds until golden brown, remove them and set aside. Then heat the rest of the olive oil in it and fry the zucchini over medium heat. Salt and pepper. Fry the zucchini sticks until water comes out. Then increase the temperature and continue to fry, stirring, until the water has completely evaporated. Add the apple and onion mixture to the zucchini and simmer for about 5 minutes. Season to taste and serve on plates. Then sprinkle the parsley and sunflower seeds on top and serve.
  3. Boiled potatoes, rice or pasta are suitable as a side dish.
