Knead the flour with butter, egg, salt and water to form a smooth dough and let it rest for approx. 30 minutes.
Wash and roughly grate the zucchini. Sprinkle with salt and let stand for about 15 minutes. Mix the cheese with the egg, parsley and cream. Season with salt and pepper.
Preheat the oven to 180 degrees (convection 160 degrees).
Roll out the dough on a floured work surface and line a greased quiche dish (26 cm) with it. Melt the butter and brush the pastry base with it. Squeeze the zucchini well and spread on the base, spread the cheese glaze on top.
Bake the quiche for about 30 minutes until golden brown.
