Roughly grate the zucchini and sauté in a saucepan with the butter. Sprinkle the flour on top and sweat. Prepare the vegetable stock according to the instructions on the package and add it to the pan with the zucchini. Then bring everything to a boil. While the soup is boiling, add the grated Gouda cheese and the processed cheese. Chop the chives and add them to the soup with the minced meat. Finally, just add salt, pepper and nutmeg to taste.
