Instructions

  1. Sauté onion cubes in hot oil, add zucchini and sauté. Pour in the vegetable stock and cream, bring to the boil and simmer for 3-4 minutes.
  2. Puree the soup, season with salt, pepper and lemon juice. Sprinkle the soup with tomato strips and serve garnished with basil leaves.
