Cut the zucchini into fine sticks and fry in oil. Take out of the pan. Then cut the onion into small pieces and grate the carrot. Cut the dates into strips. Sauté the onions, carrots, desiccated coconut, dates and curry in the pan. Add coconut milk and simmer for about 10 minutes over low heat. Finally add the zucchini and cook for another 10 minutes. Stir in cream.
