Cut rings from the onions, peel and mash the garlic. Fry this together with the diced zucchini in butter and then add the tomato cut into pieces. Season with salt and pepper and let simmer for about 6 minutes with the lid closed. Beat the eggs together with a little salt with a fork and stir in the parsley. Pour over the braised vegetables and sprinkle with grated cheese. Cook in a closed pan over low heat for about 5 minutes.
