- Preheat the oven to 220 degrees circulating air.
- Cut the zucchini into strips and season with salt.
- Mix the almonds, parmesan and spices in one bowl, whisk the egg in another bowl.
- First dip the zucchini sticks in the shell with the egg and then turn them in the almond-parmesan mixture until they are evenly covered.
- Place the breaded zucchini fries side by side on a baking sheet lined with baking paper and bake until golden brown for about 10 minutes.
- First of all, I have to say that this is a french fries substitute and of course the zucchini fries still taste like zucchini.
- I eat low-carb ketchup with it.
- Per serving (approx. 350 g zucchini) 577 kcal, 38 g protein, 9 g carbohydrates, 41 g fat.
