Peel the garlic and grate finely with a grater / alternatively chop finely. Cut the tomatoes, spring onions and the herbs into pieces of your choice and set aside.
Since the zucchini is to be used here as a pasta substitute, it is peeled into thin strips with a vegetable peeler. So just keep peeling and putting the zucchini strips aside.
Sauce:
Heat some oil in a non-stick pan and fry the prawns and garlic in it. Now reduce the heat and add the tomatoes and spring onions to the pan and simmer for a few minutes.
To get a nice, creamy sauce, add a dash of cream and, if necessary, some water to the pan. As a last step, I seasoned my sauce with salt, pepper and chilli and added the fresh herbs. Now let it steep on a low heat.
Noodles:
Boil water in a saucepan or kettle and then place in a bowl with the zucchini strips. Salt well. After about 3 minutes they should be soft and can be poured off.
