Cut the onions into rings. Then mash the garlic. Cut the zucchini into slices. Fry everything in hot oil for about 5-10 minutes. In the meantime, core the tomato, cut into pieces and add to the pan. Season with salt and pepper.
Beat the eggs and some salt with a fork and stir in the coarsely chopped parsley. Pour over the vegetables. Sprinkle with grated cheese. Let stand for about five minutes.
