Instructions

  1. Clean the zucchini and cut into thin slices or sticks as required.
  2. Put in a pan with hot oil and fry lightly. When the zucchini begin to turn slightly brown, add the rice noodles and sauté them for a few minutes. Season with salt, pepper, thyme and paprika powder and deglaze with the vegetable stock. Add the tomato paste and stir in. Then simmer gently until the rice noodles are firm to the bite and the vegetable stock has been absorbed (it may happen that you have to add a little more stock). Then sprinkle the diced feta over the top, cover and let the residual heat melt slightly. Now you can serve.
