Instructions
- Wash the zucchini, remove the ends of the stems and slice them into thin slices. Wash tomatoes and cut in half.
- Brown the pine nuts in a non-stick pan, set aside. Heat the olive oil in the same pan, fry the zucchinis well. Add tomatoes and fry briefly.
- Fold in the pesto, parmesan and pine nuts. Season with salt and pepper.
- Involtini, chicken fillet or fish go well with this.
