Ingredients
- 1 kg zucchini, peeled and diced
- 2 red peppers, cut into strips
- 4 chilli pepper (s), whole, fresh or dried
- 500 g onion (s), cut into half rins
- 3 large garlic cloves or 6 small ones without peel
- 10 teaspoon allspice, whole
- 2 tablespoon salt
- 1 ½ teaspoons black pepper, freshly ground
- 1 ½ teaspoon mustard seeds
- 1 ½ tablespoon paprika powder, noble sweet
- 1 ½ teaspoon curry, hot
- 550 ml vinegar, (apple cider vinegar)
- 500 g suar
Instructions
- Put all ingredients, except sugar & vinegar, in a saucepan and let steep for about 12 hours (preferably overnight).
- Then add the apple cider vinegar and sugar and bring to a boil. Let simmer for 5 minutes.
- Fill into prepared twist off jars and close immediately.
- Makes 8 glasses of 300 ml each (filling quantity)
