Wash the zucchini, cut in half and cut into approx. 8 mm thick slices. Wash the peppers, cut in half, remove the seeds and cut into pieces. Clean, halve or quarter the mushrooms.
Heat 4 tablespoons of oil in a pan and fry the vegetables in portions, sprinkle with herb salt, remove and place in a bowl. Season to taste with balsamic vinegar, parsley, basil and chilli salt. Drizzle with 2 tablespoons of olive oil and enjoy lukewarm or cold.
