Peel the zucchini and then cut into strips with a paring knife. Like spaghetti or ribbon noodles.
Fry the zucchini in a little olive oil. In the meantime, cut the tomatoes into small pieces and add them. Then add the water (this will make the zucchini softer and just easier to wrap around the fork).
Add tomato paste and any amount of cream cheese (I recommend: 2 teaspoons). Salt, pepper and add the herbs. If necessary, season it (e.g. with paprika powder or gyros spice). Let simmer a little more.
