Instructions

  1. Total time: 10 minutes
  2. Wash the zucchini and dice approx. 1 cm, then fry lightly in hot olive oil. Score the tomatoes crosswise and pour very hot water over them. Let stand briefly, then peel and dice. Peel off the clove of garlic and press into the zucchini. Add the tomato cubes. Season with salt, pepper and oregano and sauté for 5-10 minutes. Possibly add a little more tomato paste and serve sprinkled with basil leaves as required.
  3. Tip: You can also do twice the amount. Put what remains of it in the cold. The next day add red wine vinegar or balsamic vinegar, olive oil and possibly a few leaves of basil - then you have a delicious starter or a very tasty salad.
