Instructions

  1. Cut the zucchini into very fine slices or strips. Chop the garlic very finely. Finely crumble the feta cheese, squeeze the lemon.
  2. Cook the spaghetti al dente, add about 2 tablespoons of lemon juice to the pasta water 2 minutes before the end of the cooking time.
  3. Heat the olive oil in a non-stick pan, fry the garlic briefly, then add the zucchini and fry for about 5 minutes. Add the remaining lemon juice, plenty of thyme and a little salt and pepper. To taste.
  4. Mix with the pasta, serve on plates and sprinkle with cold feta cheese.
  5. This is my favorite pasta! Fast, cheap and, especially in summer, wonderfully light and refreshing.
