Dice the onion, the plantain, the potatoes and the mushrooms into pieces approx. 1 cm in size. Cut the chilli into fine rings.
Heat the oil in a large saucepan. Fry the onions until translucent. Add tomatoes and spices and cook open for 3 minutes on medium heat. Add coconut milk and potatoes and cook for 3 minutes.
Now add the plantain and mushrooms and cook with the lid closed on low to medium heat for 10-15 minutes. Stir in the chilli and serve. Rice or inera bread goes well with it.
