Ingredients

  • 1 banana (s), yellow, ripe
  • 5 potato (s)
  • 1 onion (s)
  • 150 g mushrooms
  • 1 can tomato (s), chunky
  • 200 ml coconut milk
  • 1 chilli pepper (s)
  • salt and pepper
  • 2 teaspoons African (Berbere) spice mix, as desired
  • 1 tablespoon oil

Instructions

  1. Dice the onion, the plantain, the potatoes and the mushrooms into pieces approx. 1 cm in size. Cut the chilli into fine rings.
  2. Heat the oil in a large saucepan. Fry the onions until translucent. Add tomatoes and spices and cook open for 3 minutes on medium heat. Add coconut milk and potatoes and cook for 3 minutes.
  3. Now add the plantain and mushrooms and cook with the lid closed on low to medium heat for 10-15 minutes. Stir in the chilli and serve. Rice or inera bread goes well with it.
