  • 1 kg beef soup meat
  • Soup greens (leek, celery, carrots, parsley, lovage)
  • 1 onion (s), halved
  • 5 grains pepper, (white)
  • 1 carnation (s)
  • 2 bay leaves
  • 5 grains coriander


  1. Toast the coarsely crushed grains and bay leaves in a soup pot SHORTLY until dry. Brown the onion dry. Pour in water, add all ingredients. The meat should be barely covered. Bring to the boil and simmer on a low setting (electric stove) covered for approx. 90 minutes.
  2. That makes a great meat broth that can be used universally.
  3. The meat can be processed very well (see recipe Meat Salad).
